The story
Finca Anarquía is a small part of what used to be the El Pinar Hacienda, established in the late 1800s by Juan Ramón Calderón. The work philosophy prioritizes total respect for the community and the environment. Varieties: Pacas and Bourbon — 48-hour anaerobic pulping and fermenting, sun-dried on beds for 35–40 days; Typica and Pacamara — pulped and fermented for 72 hours, dried on beds in the shade for 16 days (to 20% humidity), then 15–20 additional days in the sun.
